6 large eggs
2 Tbsp cream or milk
salt and pepper
2 Tbsp butter
1 c shredded Monterey jack cheese
1 recipe filling for Denver omelets

Directions:
Directions:
1. Whisk together 3 eggs, 1 Tbsp cream, 1/4 tsp salt and 1/8 tsp pepper in small bowl until thoroughly combined.
2. Melt 1 Tbsp butter in 10 " non-stick skillet over medium high heat and swirl to coat pan, cook butter until just beginning to brown. Add egg mixture and cook until edges begin to set, 2-3 seconds. Using heatproof spatula, stir in circular motion until slightly thickened, about 10 seconds. Use spatula to pull cooked edges into center, then tilt pan to one side so that uncooked egg runs to edge of pan. Repeat until omelet is just set but still moist on surface, 1-2 minutes.
3. Sprinkle 1/2 cup Monterey jack evenly over eggs and let cheese partially melt, 15 to 20 seconds. With handle of pan facing you, spoon half of the filling for Denver Omelets over left side of omelet. Using spatula, slide filling-topped half of omelet onto warmed plate, then tilt skillet so remaining omelet folds over filling in half-moon shape; set aside. Repeat for second omelet. Serve.
