2 cups brown rice
1/2 onion, chopped
1 clove garlic, minced
1/4 cup chopped cilantro
1 can diced tomatoes with jalapeño
vegetable broth
olive oil
1 can black or kidney beans, drained and rinsed
1 cup reduced fat, sharp cheddar cheese

Directions:
Directions:
Preheat oven to 350º. Saute onion and garlic in oil. Add rice and cilantro. Cook until rice is slightly browned. Add tomatoes and broth to measure 2 cups. Cook until mixture is creamy but still wet about 15 minutes. Stir in beans. Fold into greased 9" casserole. Sprinkle with cheese. Bake 15 minutes or until cheese is melted and casserole is bubbly.
