1 C chopped bacon
1 T salted butter
3 C shredded peeled potatoes
1/2 C sliced green onions
1 C shredded aged cheddar cheese
12 large eggs
Sriracha Sauce

Directions:
Directions:
Saute bacon. Remove from heat and drain on paper towls.
Melt butter in pan. Add potatoes and saute 8-10 minutes. Remove from heat.
Return bacon to fry pay and add green onions. Stir.
Divide potato mix amount 12 muffin cups. May refrigerate overnight at this point.

Preheat oven to 425 degrees.
Top potato mix with cheese. Crack 1 egg on top of mix in each muffin cup.
Back 15 minutes.
Serve with Sriracha Sauce.
