1 pound pasta
4 T. butter
4 T. olive oil
2 shallots, finely diced
2 cloves garlic, minced
pinch red pepper flakes
1/2 cup dry white wine
juice of 1 lemon
1/4 cup finely chopped parsley
1 # clean, raw shrimp or roasted vegetables or both

Cook pasta al dente. In large skillet, melt 2T. butter and 2T. olive oil. Saute shallots, garlic and red pepper flakes 3-4 minutes. If using shrimp, add next and saute 2-3 minutes until pink. Remove shrimp and set aside to keep warm. Add wine and lemon juice and bring to a boil. Add 2 T. butter and 2 T. olive oil. When the butter has melted, return shrimp to pan with parsley and pasta. Stir well. Season with salt and pepper and serve.

If using vegetables, roast in oven onion, peppers, brocolli, carrots, cauliflower, green beans and garlic. Toss in to skillet with pasta.

It is our tradition to serve the pasta scampi seperate from the shrimp and vegetables so everyone can make their own plate. This satisfies both vegetarians and shellfish eaters.
