4-6 pound filet of beef fat trimmed
¼ cup good extra virgin olive oil
your favorite dry rub steak seasoning. I like Uncle Chris's (Fiesta Brand), My sister Cindy likes Adams Reserve Rib & Steak Rub.

Rub filet with olive oil and generously sprinkle on your favorite dry rub steak seasoning.
I do this a few days prior to cooking and store in an air tight container in the refrigerator. But at a minimum, you should do this 1 hour prior to cooking.

The ends of the filet are usually much thinner than the rest so most people will tie them up to make the ends more thick like the rest of the filet. I leave mine down as my husband loves his filet well done and the ends come out perfect for him.

Take filet out of the refrigerator 1 hour prior to cooking to get closer to room temperature.

You can cook this in the oven or on a grill.

Bake at 500º or Grill indirect at 500º for 35 minutes if you wish for the meat to be medium rare in the middle to medium well/well on ends. Bake for 30 minutes if you wish for the meat to be rare in the middle to medium + on the ends

LET MEAT REST AT LEAST 10 MINUTES TENTED UNDER FOIL BEFORE CUTTING

Slice into steaks and serve.
