3 tbsp butter
1 ½ cups whipping cream
1 ¼ cups milk
2 ½ pounds red potatoes
1-2 cups Gruyere cheese shredded
1 or so cups of Parmesan cheese shredded
2 shallots chopped
3 cloves garlic chopped
red pepper flake to taste
salt and pepper to taste

Peel and slice potatoes into ⅛-¼ inch slices
Melt butter in a Dutch oven or large skillet with tall sides. Add garlic and shallots and saute. Add milk, cream, and pepper flakes and potatoes. Bring mixture to a simmer and cook for about 15 min stirring periodically.

With a slotted spoon, make a layer of potatoes in bottom of greased 13x9 inch baking dish. Ladle some cream mixture over potatoes and sprinkle with both cheeses. Keep layering until you use all potatoes, cream, and cheese.

Bake for an hour at 350º or until cheese is brown and bubbly and the potatoes are fork tender.

The original recipe for this dish came from my mother in law Marsha. She made this for Christmas when they lived in Memphis. Like most recipe's I have changed it up over the years to make it my own. This dish is very rich and goes great with holiday ham or filet of beef.
