2 cups yellow squash, cooked, drained and mashed
1 can cream of chicken soup
2 medium carrots grated
1 cup sour cream
1 small jar pimientos
1 medium onion chopped

For crust and topping:
1 packaged prepared stuffing mix
1 stick butter

Directions:
Directions:
Mix all ingredients together (except stuffing mix and butter). Season with salt & pepper.
In a casserole dish melt the stick of butter and mix with package of stuffing mix. Take of 3/4 cup of stuffing mix for top of casserole.
Line bottom of casserole dish with stuffing mix. Add mixed ingredients. Top with the 3/4 cup of reserved stuffing mix.
Bake at 350 for 30 minutes.
