1 1/2 TBSP butter, melted
3 eggs
3 TBSP milk
3 TBSP sugar
1 TBSP lemon juice
1/4 tsp salt
4 1/2- 5 cups flour

Directions:
Directions:
Combine eggs, milk and sugar. Stir in butter, lemon juice, salt and 2 cups of flour. Mix well. Keep adding more flour to make a stiff dough. Refrigerate at least one hour. Take 1/4 of the dough and roll out until paper thin. Cut into triangle or diamond shapes (important!), approx. 2 inches long. Fry in deep oil until golden (about 30 seconds). Serve with clear syrup or other flavored syrup of your choice (straw or choc work well too).

Mom would make this as a breakfast treat on special occasions. They remind me of sopapillas (a Mexican fried bread). While they were hot, we would dip them into clear karo syrup, and gobble them up! Left overs were frosted with powdered sugar icing for later. Definitely not a 'healthy' breakfast, but memorable as a special treat!
