Grandma's Coconut Meringue Pie Recipe

3 eggs, separated
1/4 tsp salt
2 TBSP cornstarch
1 TB flour
1/2 cup sugar
2 cups milk (OR 1 c. half & half plus 1 c. coconut milk- a more recent option)
1 tsp vanilla
6 TBSP sugar
3/4 c. toasted coconut (add this AFTER pudding is made)

Directions:
Directions:
1) Heat up the milk until hot but NOT boiling.
2) Combine yolks, sugar, salt, flour, cornstarch, and a couple tablespoons of the hot milk. Stir until smooth.
3) Add this mixture to the rest of the hot milk and stir over low to medium heat until thickened, using a whisk.
4) Remove from heat, add the vanilla and cover pudding with saran wrap to prevent having a film.
5) Let cool for approx. 30-45 minutes.
6) While still warm, add the toasted coconut and pour into a cooled, prepared crust.

For Meringue:
Beat room temperature egg whites in a glass or metal bowl till frothy and thickened. Add 6 TBSP sugar and a pinch of salt. Beat until it holds in peaks. Put on top of pie and sprinkle with coconut. Bake at 350 degrees until meringue is golden brown, approx. 5 minutes.

I remember years ago when Grandma Unruh made this pie. Sooo wonderfully creamy and delicious. It's a special treat to make this from scratch and relive the memories of times spent in the kitchen with her.

Kevin - This is my most favorite recipe. I have looked the world over and I have never found a better pie. Thanks Gma. Love you.
