2 shallots, diced
3 cloves garlic, minced
1 red onion, diced
2 T. olive oil
3 cups dry white wine
4 cups canned diced tomatoes
2 cups milk
1 ounce chopped fresh basil

Directions:
Directions:
Saute onion, garlic and shallots in olive oil. Add wine and reduce by 3/4. Add tomatoes and cream and simmer to reduce by 1/2. Puree soup. Stir in basil, salt and pepper.
