1 c. shortening or vegetable oil
2 c. sugar
2 eggs
1/2 tsp. salt
6-8 bananas (depending on size)
2 tsp. soda
1 3/4 c. sifted flour
Optional: 1 c. chopped pecans

Directions:
Directions:
Grease and flour a tube pan.

Cream together by hand shortening, sugar, eggs and salt. Mash up the bananas on a large plate and put soda on top and mix well. Add to the sugar mixture and mix well. Add the flour and mix.
Add the optional nuts if desired. Bake in oven at 350 degrees for 1/2 hour and then turn down oven to 325 degrees for almost another hour until well browned on the outside.

This cake is very moist and most people like it without the pecans. The key is to bake the cake until the cake has a crusty outside.
Also it can be cooked in two bread pans.
