1 cup sugar
1 cup dark corn syrup
3 eggs
4 tbsp. butter
1 tbsp. vanilla
1/4 tsp. salt
1 cup hickory nut pieces

Directions:
Directions:
Preheat oven to 450 degrees. Cook sugar and syrup over low heat, stirring constantly, until mixture is smooth and thickens. Beat eggs in a large bowl. Slowly add hot syrup mixture to eggs, beating constantly. Add salt, butter, and vanilla. Stir in hickory nuts. Pour into unbaked pie shell. Bake at 450 degrees for 10 minutes, then reduce heat to 300 degrees and bake for 35 minutes.

Jim's dad would pick up bushels of hickory nuts from the woods. He spread the nuts out on the basement floor to dry. Once the nuts dried, he would crack them and pick out the nut meats while watching television. One winter, he ended up with 68 quarts of nut meats! The pie is sweeter and more flavorful than pecan pie!
