1 2 lb. bag hash brown potatoes, thawed
1/4 c. butter, melted
1 tsp. salt
1/2 tsp. pepper
2 tbsp. minced onion
1 can cream of chicken soup
2 c. sour cream
2 c. shredded cheddar cheese
1/4 c. butter, melted
2 c. crushed cornflakes

Directions:
Directions:
Mix together the first 8 ingredients (could use cream of mushroom soup instead). Put in a buttered 9 x 13 inch baking dish. Mix cornflakes and 1/4 cup of melted butter. Put over top of potatoes. Bake at 350° for 45 minutes to 1 hour. May be made ahead of time and refrigerated until ready to bake.
