5 - 6 cups flour
1/3 cup sugar
2 tsp nutmeg
1 tsp salt
1/2 tsp cinnamon
2 pkg yeast
1 1/4 cup milk
1/3 cup margarine
2 eggs
4 cups oil
Optional if Filling Doughnuts with Jelly:
2 cups jelly
powdered sugar

Heat margarine and milk until very warm. Combine 1 1/2 cups flour and sugar, nutmeg, salt, cinnamon and yeast. Beat liquid mixture into dry ingredients. Add eggs and beat 2 minutes. Beat in 3/4 cup flour to make a thick batter (about 2 minutes). Stir in 1 3/4 cups flour to make a soft dough. On floured board knead until smooth (about 10 min). Cover with dishtowel and let rise until double in size (about 1 hr). Punch down and put on floured board and cut dough in half. Let dough rest for 15 minutes. Roll dough 1/4 in thick. Cut doughnuts and place on cookie sheet. Cover with towel and let rise until double in size (about 1 hr). Fry in one inch of hot oil. Drain and cut hole in side and fill with jelly or roll in sugar. Variation would be to cut doughnut with doughnut cutter which has hole already in middle of doughnut.
