4 c. all-purpose flour
4 tbsp. white sugar
1 tsp. baking soda
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. softened margarine
1 c. buttermilk and a separate 1/4 c. buttermilk*
1 egg
1/4 c. melted butter

1. Preheat oven to 375º. Lightly grease or using parchment paper prepare a large baking sheet.
2. In a large bowl combine the flour, white sugar, baking soda, baking powder, salt, and margarine.
3. Stir into this dry mixture 1 c. buttermilk and egg.
4. Turn dough out onto a lightly floured surface and knead slightly. Form the dough into a round that is approximately 2" height. Place on the prepared baking sheet.
5. In a small bowl, combine the 1/4 c. buttermilk and 1/4 c. butter. Brush the loaf with this mixture. Using a sharp knife, cut an "X" in the top of the loaf.
6. Bake in a preheated oven until a toothpick inserted into the center of the loaf comes out clean. Baking time varies but normally is 45 to 50 minutes. Start monitoring doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

You may want to experiment by adding 5 - 6 tbsp. sugar to the batter.

This recipe is fast and easy. The baking powder and soda will cause the batter to expand quite a bit. The recipe is fine using 2/3 wheat flour and 1/3 white flour for more fiber. The addition of yellow raisins is very nice.

A buttermilk substitute is made with 1 c. milk and 1 tbsp. vinegar or lemon juice. Mix the vinegar/ lemon juice and milk. Let stand 1 minute.
