Chili Enchiladas Recipe

2 (15 oz.) Wolf or Hormel chili, no beans
1 lb. ground beef or turkey
¼ c. onion, diced
¼ c. green bell pepper, diced
2 c. shredded Mexican cheese
5-6 flour tortillas

Preheat oven to 375º

Pour 2 cans of chili into microwaveable bowl and heat 1 minute 30 seconds, 3 times, stirring in between each cycle. Set to side.

Season and brown ground beef or turkey with diced onion and green pepper. Drain and set aside.

Use a medium pan/glass dish to place tortillas. But first, add 1 tbsp. of chili at the bottom of dish to prevent tortillas from sticking. Add tortillas to pan folded up as if you are making a taco. Stack each one beside the other so they are easy to open and fill.

Layer tortillas as follows: 1) ground beef or turkey, 2) 1 tbsp. chili and 3) sprinkle with shredded cheese.

After filling each tortilla, roll it with the seam side down.

Top with remaining chili, ground beef or turkey and shredded cheese.

Bake in oven, uncovered, for 20 minutes. Enjoy!

This was a recipe I stumbled upon that my husband first made for me. The original recipe did not contain green peppers or onions, so after he added the veggies, we made it our own family recipe.
