3 ears of corn on the cob
1 red bell pepper, split and seeded
1 teaspoon poultry seasoning
1 teaspoon cumin
1 small to medium zucchini, small dice
1 medium yellow onion, chopped
3 cloves garlic, chopped
1 to 2 chipolte peppers in adobo sauce or two green chilies, diced
1 can stewed tomatoes
1 cup low sodium V-8 juice
3 cups broth or water
1 can black beans

Directions:
Directions:
Heat a grill pan to high. Spray corn and red pepper with cooking spray. Grill 10 minutes, turning occasionally. Remove to cool. Remove corn from cob and dice pepper.

Saute zucchini, onion, garlic and chipolte peppers. Add seasonings, broth or water, V-8 and tomatoes. Bring sauce to boil. Add in corn and diced red pepper. Add canned beans.
