1 pound package wild rice
1 small onion, diced
1 small green pepper, diced
3 sticks celery, small chop
1 1/2 pounds hamburger
3 cans water chestnuts
3 jars of sliced mushrooms (small jar)
1/4 cup or more soy sauce
3 cans cream of mushroom soup
salt & pepper to taste (not much)

Prepare wild rice per package directions and set aside (can be done beforehand). Sauté onion, pepper, celery and hamburger. In a very large bowl (we use a roaster pan), mix all ingredients together. Add more soy or soup depending on taste and moisture level (even after cooking or reheating). Place in two 2 1/2 quart ungreased casserole dishes and cook for 45-60 minutes at 350º.

My dad makes this every Thanksgiving where we cook one casserole and freeze the other (before cooking) and then take that one out to prepare for Christmas. It is such a family favorite and tradition that one holiday when my cousin was in a strict vegetarian stage, she pretended there was no meat in it and wolfed it down.
