Prepared 9 inch pie crust---traditional or graham cracker

1 cup brown sugar
1/4 cup cornstarch
1/2 tsp salt
1 cup water
1 and 2/3 cup milk
1/3 cup butter
3 egg yolks
1 and 1/2 tsp vanilla

Directions:
Directions:
Mix in heavy saucepan the brown sugar, cornstarch, and salt.
Gradually stir in water and milk. Add butter.

Cook over medium heat, stirring CONSTANTLY, until mixture thickens and boils. Boil 1 minute. Remove from heat. Gradually stir at least half of the mixture into a bowl with 3 slightly beaten egg yolks. Pour back into saucepan. Boil 1 more minute, stirring constantly. Remove from heat. Add 1 and 1/2 tsp. vanilla. Pour immediately into prepared crust. Top with meringue (separate recipe titled Pillager Cafe Meringue) Bake at 400 degrees for 10 minutes or until lightly browned.
