Crushed pineapple
Whipping cream
Sugar
Vanilla

Cook rice, adding to lightly salted boiling water. (Hint: use 1 part rice, 3 parts water). When water returns to boiling, turn heat down, cover and simmer 20 minutes. DO NOT UNCOVER WHILE COOKING!
When rice is cooked, drain, rinse well with cold water. Let cool. Put in large bowl. Add 1/2 pint cream, whipped (1 pt if you made a lot of rice) sweetened with 1/2 to 1 cup sugar and 1 tsp. vanilla. Add 1 large can crushed pineapple, drained well. Stir until well mixed. Cool and serve.

I use 1 cup long grain white rice to 3 cups water. More cream and more sugar may be used to suit your taste. Myron said no holiday was complete without this.

Note from Lynn Sandberg Scearcy: Myron was right...it wouldn't have been Christmas Eve without the glorified rice. I recall Lois sometimes decorated the top with drained Maraschino cherries, but maybe I made that part up.....
