12 to 14 lb turkey
6 tbs herb butter, softened and divided
1 tbs salt
1 tsp pepper
1 onion , quartered
4 celery stalks, chopped
1 lemon quartered

Directions:
Rinsed turkey and pat dry, place in a roasting pan. Gently loosen skin on breast ; spread one tablespoon under skin. rub turkey inside and outside with remaining butter; sprinkle with salt and pepper. Place onion, celery and lemon inside turkey. insert a meat thermometer into the thickest part of thigh; cover loosely with aluminum foil. Roast at 325 º for 2 1/2 hours ; uncover. Roast for an additional 1 hour, basting every 20 minutes, until thermometer reaches 180º Transfer to a platter; cover .
