1/8 tsp. Salt
1-1/2 cups sugar
2 tbsp. Flour
1/2 cup butter, softened
Grated rind of one lemon
1/4 cup water
1/4 cup fresh lemon juice
1 unbaked 9 in. Pie crust

Preheat oven to 350º F.

Beat eggs an salt with an electric mixer at high speed until fluffy.

In a large bowl, combine sugar, flour, butter and lemon rind. Mix thoroughly. A pastry blender works well for this step. Mixture will have a coarse texture. Add eggs, blending with a spoon. Add water and lemon juice. Pour into unbaked pie crust.

Bake 35 minutes.
