2 1/2 c. whole wheat flour
1/2 c. blue cornmeal
1 T. baking powder
1/2 t. cinnamon
1/2 t. nutmeg
1/2 t. allspice
1/2 t. salt
3 eggs
1/3 c. applesauce
1/3 c. honey
2-3 c. milk (add more mild to thin as needed)
1 c. chopped apple
1 c. chopped pecans

Directions:
Directions:
Mix together in a large bowl the flour, cornmeal, baking
powder, salt, and spices. Set aside.

Mix together the eggs, apple sauce, honey, and milk.
Combine with the dry mixture. Blend well.

Fold in the chopped apples and chopped pecans.

Fry pancakes, keeping finished ones warm in the oven.
