Ingredients:  
4 eggs scrambled and cooked
Onion, chopped
Bok Choy or Green Peppers or Broccoli (something green)
1 carrot shredded or chopped
1 can of water chestnuts, drained and chopped
or use one bag of frozen oriental veggies
1 t of minced garlic
1 - 2 T of soy sauce
2 cups of cooked rice
cooked bacon or ham

Directions:
Directions:
Saute the onions slowly until soft
Saute the rest of the veggies quickly over high heat (move onions out of pan)
Add the onions back along with the rice and stir fry for a few minutes
Add the soy sauce
Add the egg and bacon or ham if using
