Ingredients: 3 cups grated cassava
1 cup grated fresh coconut
1 cup grated pumpkin
1/2 cup of grated sweet potato
1 tsp fresh grated ginger
4 tbsp butter or margarine, softened
2 tsp mixed essence
1 cup white granulated or coconut sugar
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 1/4 cup coconut milk
½ tsp salt
¼ tsp ground black pepper
½ cup golden raisins, optional

Directions: |
Directions:Preheat oven to 350° F.
Mix all ingredients together in a large bowl.
Transfer mixture to a greased dish and bake @ 350° F for about 1 – 1 ½ hours. The edges should look brown and starting to separate from the baking dish at this point.
Check at the one hour mark for done-ness, by inserting a toothpick in the center of the pone, if it comes out clean, it's good to go, if not , leave it for another 15-20 minutes.
Remove from oven and allow to cool for 30 minutes before slicing into sizes you desire,
Can also be served with a dollop of whip cream and toasted coconut. |

Notes: You can shred the cassava, sweet potato, coconut and pumpkin by hand with a box grater, or in a food processor with the shredder blade (easiest way).
You can also find frozen cassava and coconut in the supermarkets these days.
Please note you will just need one small West Indian sweet potato or Batata for the recipe
