4.5 - 5 ounces dried sorrel - they usually come in those sizes and larger.
2 cups sugar or sugar substitute, you can always add more
1 small piece of fresh ginger. (about 1 inch) or a knuckle,
2 small cinnamon sticks , or 1 large
2 bay leaves
6 whole cloves
1small piece orange peel (this is totally optional)
1 gallon of water (16 cups) plus 4 more cups hot water
2 teaspoon vanilla extract or mixed essence

Bring 16 cups water to a boil
Add , cinnamon sticks , whole cloves , bay leaves and ginger.
Stir continuously while boiling for 1 minute
Cover and allow to simmer on low for 30 minutes.
Add Sorrel ,sugar , orange peel and remaining 4 cups hot water
Continue on simmer for another 20 minutes.
Turn the heat off and allow to steep for about 4 hours or overnight, covered.
Using a sieve ,strain and squeeze sorrel flowers, then discard.
Add extract ,taste for strength and sweetness.
If it is to potent, add water, if it’s to tart add more sugar.
Pour into glass jars or bottles and store in your refrigerator until ready to use.

If you are using the fresh sorrel,there is no need to boil the sorrel, just follow the same steps and after adding the sorrel,cover pan and turn off the flame and allow to steep for a minimum of 4 - 8 hours and up to 24 hours

if you are not to concern about your sugar intake, you should use at least 3 cups of sugar, I have use sugar substitute with great results as well as agave.

The reason I add the orange peel at the 2nd boil, if use it at the first boil, it may tend to get a little bitter.. You can leave it out entirely , but I personally love the flavor of the orange peel in it. But it taste great with or without it.

Do not use any ground spices in your sorrel.

If you like allspice, you can add about 6 whole all spice berries to the first boil.
