1 poblano pepper; stem and most seeds removed
1 green onion
10 stems cilantro
2 tablespoons apple cider vinegar
15 ounces black beans; canned -- drained and rinsed
salt and pepper

Directions:
Directions:
Roughly chop the three green ingredients. Put them in a blender or Cuisinart with the vinegar. Blend well, scraping down the sides a few times.

Add the drained beans, plus salt and pepper to taste. Blend again. Serve with chips.

Joe prepared this recipe during one of our visits, and shared it with us when we left. It has become a favorite of Evan's, particularly during his current black bean obsession. It is very easy to make in the blender, and is a hit at parties.
