14 oz. canned pumpkin
1/2 tsp. salt
1-3/4 cup milk
3 eggs
2/3 cup dark brown sugar
2 tbsp. granulated sugar
1-1/4 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/4 tsp. cloves, ground
1 recipe Single Crust Pie Shell OR Pillsbury Pie Crust

Directions:

Prepare pastry recipe. (See separate recipe for Single Crust Pie Shell elsewhere in this section.) Fit uncooked pastry in bottom of pie pan and set aside. Preheat oven to 425º F.

Combine the remaining ingredients in bowl or blender and mix or blend thoroughly. Pour mixture into the pie pan over the dough shell.

Bake at 425º F for 45 to 55 minutes or until a silver knife inserted one inch from the side comes out clean. The center may still look soft but it will set nicely when cooled if you follow the Silver Knife Rule. (Stainless steel works fine, too.)
