2/3 cup chopped onion
1 teaspoon crushed caraway seeds
1 teaspoon olive oil
3 cups chicken broth
3 cups water
3 cups cauliflower flowerets (1 small head)
1/2 cup orzo
1 pound boneless, skinless chicken breast
4 cups chopped red Swiss Chard, washed and drained
(or 1 package frozen chopped spinach)

Directions:
Directions:
Cook the onion and caraway seed til softened in the oil.
Add the broth and water and bring to a boil.
Stir in the cauliflower and orzo. Simmer 7 minutes.
Add the chicken and the chard and simmer until the chicken is cooked.
Season.
