Peach Cobbler with Texas Peaches and Kentucky Bourbon Recipe

1 cup unbleached all-purpose flour
1 tsp baking powder
1/2 tsp salt
2 large eggs
1 cup sugar
2 tbsp butter softened
2 tbsp milk
1/2 cup Jim Beam Kentucky Bourbon (or brandy or sherry)
1/2 cup sugar
3 to 4 cups fresh fruit (prefer fresh Texas peaches when in season)

Preheat oven to 375º F. Grease a 10 inch round baking pan (prefer Bennington Pottery baking dish), or substitute 11 inch round quiche dish.

Mix flour, baking powder, and salt and set aside. Beat together eggs and one cup of sugar. Add butter and milk. Add flour mixture, stirring just to combine. Pour batter into greased pan.

In saucepan, simmer 1/2 cup sugar and the bourbon 3-4 minutes, until the sugar has dissolved. Peel and slice peaches or rinse berries. Toss fruit to coat with the bourbon and sugar syrup. Spoon hot fruit mixture over the batter in the pan. Save the excess syrup mixture to pour over cobbler (and ice cream) when served.

Bake for 35-40 minutes until center is done. Serve with whipped cream or ice cream.

This is a fabulous way to use fresh summer fruits, especially Texas peaches in season in the summer time. It makes a very popular dinner party dessert. From the King Arthur Flour Baker's Companion. The King Arthur title is Basic Fruit Cobbler (fruit atop a cake crust) -- a classic understatement.
