2 cans tart cherries (NOT cherry pie filling or sweet bing cherries)
3/4 cup sugar
2-1/2 tbsp. cornstarch
1 cup juice from cherries
4 drops almond extract
dash of salt
1 pastry for a 10" lattice top pie

Directions:
Directions:
Drain cherries. Save and set aside the juice from the cans.

In saucepan, combine sugar, cornstarch and salt. Gradually add cherry juice, stirring until smooth.

Cook and stir until thick and clear. Add almond extract. Leave to cool.

Sprinkle bottom of 10 in. pie pan with flour and line with pie crust.

Add cherries to cooled cornstarch mixture.

Pour cherry mixture into pie crust and cover with lattice top crust. Sprinkle top of crust with sugar.

Bake in 425º F oven for 40 minutes or until lightly browned and bubbly. It may be necessary to cover edges of crust with foil to avoid over browning.

If you pick up cans of cherry pie filling thinking that it can't make a difference you will be disappointed. If you judge the result to be too tart, serve with a scoop of Blue Bell Homemade Vanilla ice cream.
