2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
3 Tbsp sugar
2 large eggs
2 cups buttermilk*, room temperature
4 Tbsp unsalted butter, melted and slightly cooled

Serves: 12 four-inch pancakes
Time: 20-30 minutes, depending on your cooking surface area!

Assemble flour through sugar. In a separate, large mixing bowl, mix eggs, buttermilk and butter. Add dry ingredients until just moistened. Let rest for about 5 minutes.

Heat the griddle or frying pan to 350F or under medium-high heat. It is ready if a drop of water will dance across the surface.

Rub the griddle down with a butter, then wipe off excess with paper towel.

Ladle batter onto griddle and cook until bubbles form and the bottom is golden, about 3 minutes. Flip and cook until the second side is golden, another 2 minutes or so. Adjust heat as needed.

Serve hot or keep warm layered inside the folds of a kitchen towel placed under a heating pad on high.

Leftover pancakes freeze great; separate with wax paper and place in zipper bag. We put them in the toaster to reheat.

*If you don't have buttermilk, place 2 Tbsp vinegar in glass measuring cup and top off with milk to make 2 cups. Let sit 5-10 minutes then proceed to use it in recipe!

This comes from Alton Brown's "I'm Just Here for More Food" cookbook. This page is embarrassingly dirty. Which means Jeff has used it. Just kidding...we have made this recipe for years and we haven't found a better pancake recipe out there!
