Crepes
1 egg
1 cup of water
1 cup of flour


Filling
1 pound of ricotta
1 egg beaten
1/2 pound of morzzella shredded
Dash of salt, 2tablespoons of fresh chopped parsley and 1/4 Italian cheese
Mix all together

Directions:

To make crepes(shell)
Mix all together, mix till there's only small lumps
Heat up flat pan to make crepes (shell)
Pour about 1/4 cup on heated pan, spread with spoon to make thinner, flip over when firm, remove from pan and let cool.

Fill shells with filling, place filling in center of shell, spread towards sides then roll
Place on pan with gravy on the bottom, spread some on top too


Bake on 325 for about 30 minutes or until pipping hot and cheese melts. Let cool for about 5 minutes before serving

Our Christmas family tradition, so light, fluffy and delicious. When I was young we always ate lasagna but started my own tradition later on with manicotti.
