3 T butter
1 onion chopped
3 stalks celery chopped
1/2 t poultry seasoning
Pepper to taste
6 1/2 c crushed Rice Chex

For center:
1/3 c chicken fat or 1/2 c butter
2 1/2 c chicken broth
2 c cut up chicken
1/2 c flour
1/2 t salt

Directions:
Directions:
For topping: melt butter. Cook onion & celery in butter until soft. Add pepper and seasoning. Add crushed cereal and toss lightly, place 1/2 in a 9 x 13 pan.

For center, melt butter or fat whisk in flour, slowly whisk in broth and salt. Stir and cook until thick and bubbly. Add chicken. Pour over cereal mixture and top with remaining cereal mixture. Bake a 375º for 30 minutes.
