3 c. water
2 ½ lbs. fresh cucumbers
1 small sweet onion, cut in chucks
1 avocado, peeled and pitted
1 tsp. herbs de Provence
1 tsp. dill
1 tsp. salt
¼ c. fresh chopped parsley
Directions:

Blend all ingredients in the blender. Serve cold garnished with fresh parsley and a dollop of soy sour cream.
