3 c. sugar
1 1/2 sticks butter or margarine
1 small can (5 oz.) evaporated milk (about 2/3 c. total)
1 package plus small handful of semisweet or milk chocolate chocolate chips
1 jar (7 oz.) marshmallow creme
1 c. chopped walnuts, optional
1 tsp. vanilla extract
15 to 20 small marshmallows, optional

Line 9 inch square pan with foil. Boil sugar, butter, and milk to full rolling boil in large saucepan on medium heat, stirring constantly. Boil 4 minutes or until 234º on candy thermometer, stirring constantly. Remove from heat. Add chocolate and marshmallow creme. Stir a lot until chocolate is melted and no longer grainy. Stir in nuts and vanilla and marshmallows. Pour immediately into prepared pan. Cool.

Milk chocolate chips make a less grainy fudge. It is much easier to mix.
