2 lb. black dry beans
Water
2 onions, sliced
4 garlic cloves, sliced
1 Tbsp. granulated garlic
1 tsp. thyme
1 tsp. cumin
1 tsp. ground bay leaf
1 Tbsp. salt
1 can unsweetened coconut milk
juice of one lime

Directions:
Directions:
Soak black beans in water over night. Drain beans, cover with fresh water and bring to a boil. Turn off and let sit one hour. Drain beans and cover with fresh water. Add all except last two ingredients and simmer until beans are soft. Add more water as needed. Last stir in coconut milk and lime juice before serving. Add more water if thinner soup is desired, or cook thick beans to serve over rice or taco salad.
