2 1/2 lb collar of bacon
1 pint apple juice
onion, sliced
freshly ground black pepper to taste
2 tbs corn flour

Directions:
Directions:
Place bacon in a large sauce pan and cover with cold water. Bring to boil, slowly. Discard the water and place bacon in a casserole dish. Add the apple juice and onion to the pan and bring to a boil. Pour over the bacon and cook in the oven for 3 hours on a low heat. When cooked, remove bacon from dish and place on a serving dish, keep warm. Place the corn flour in a small pan and blend with a little cold water. Gradually stir in the apple juice. Bring to a boil and simmer for 2 minutes. Serve as a sauce with the bacon.
