1 1/2 cups white cornmeal
2 tbsp all-purpose flour
1 1/2 tsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 1/4 cups buttermilk
2 eggs, beaten
1 tbsp. vegetable oil
1 tbsp. shortening or bacon drippings
2 stalks celery, diced
1 1/2 medium onions, grated
3 1/4 to 3 3/4 cups turkey or chicken broth, divided
1 1/4 cups herb-flavored stuffing mix
1 to 1 1/2 tsp rubbed sage
1 tsp white pepper
1/2 tsp garlic powder

Directions:

Combine cornmeal, flour, sugar, baking powder, soda, and salt in a large mixing bowl; add buttermilk, eggs, and oil, mixing well.

Place 1 tbsp. shortening in a 10-inch cast-iron skillet. Place skillet in a 450º oven for 3 to 4 minutes or until hot. Tilt pan to evenly distribute shortening; pour batter into pan. Bake at 350º for 25 minutes. Cool; crumble the cornbread into a large bowl.

Cook celery and onion in 1/4 cup broth in a skillet until tender. Add celery mixture, remaining broth (adjusting for desired moistness), and remaining ingredients to cornbread crumbs; mix well. Spoon mixture into a lightly greased 12- x 8- x 2-inch baking dish. Bake dressing at 350º for 40 minutes.

This recipe came from Southern Living 1985 Annual Recipes, and was Nona's favorite for Thanksgiving and Christmas turkey stuffing. Of course, this only works if you're baking the turkey in an oven, or maybe a smoker. Forget stuffing and just bake if your going to boil the turkey in oil.
