2 lbs. small red beans or yellow eyes
1 onion, sliced
4 cloves garlic, chopped
1 tsp. poultry seasoning
1 tsp. oregano
2 tsp. salt
1 15 oz. can stewed tomatoes
½ c. molasses

Directions:
Directions:
Sort beans and soak overnight. Drain and rinse beans. Cover with water in a kettle and bring to a boil. Stop cooking, drain water, and cover with fresh water again. Cook on stove top until soft. Transfer soft beans to an oven safe pot. Mix in all ingredients and bake at 300 for several hours. Be sure to check the progress periodically and add additional water as necessary.

Baked beans has been the traditional Sabbath meal in our family for generations. The flavoring in this particular version was inspired by Aunt Ruth's beans. She usually baked soy beans, but we like any kind of beans. The correct way to eat them is ladled over a slice of home made bread. (At least that's what we were taught.) Baked beans warm the heart with thoughts of family, and the beans are excellent for keeping your heart healthy.
