5 10 oz packages of frozen chopped spinach - thawed
2 L onions - chopped
3/4 C butter or margarine - divided
6 -7 Eggs (6 if ex. large) - lightly beaten
3/4 lb feta cheese - crumbled and divided
1 scant cup Parmesan cheese
1/3 C bread crumbs

Directions:
Directions:
Melt 1/4 C of the butter and set aside for topping
Crumble 1/4 of the feta cheese and mix with bread crumbs - set aside for topping

Saute onions in 1/4 cup butter until they are transparent
Melt remaining 1/4 cup butter and place in large bowl. Squeeze liquid from each package of spinach using paper towel; discard liquid. Add spinach to butter and combine. Stir in the eggs, onions, remaining feta cheese and Parmesan.
Spread in 9 * 13 baking dish. Sprinkle bread crumb/feta cheese on top and drizzle with the 1/4 c melted butter.
Bake at 350 degrees for about 30 minutes. A knife should come out hot when inserted into the center.

Add an additional 10 - 15 minutes baking time.
