1 c. flour
4 eggs
1/2 c. milk
1/2 c. water
1/4 plus tsp. salt
2 tbsp. butter or margarine
1 tsp. vanilla extract
2 tsp. sugar

Directions:
Directions:
Put all ingredients in blender and place in fridge a couple hours before using. The first couple of crepes will be bubbly.
Cook by putting a small amount of mix in bottom of 9-inch nonstick pan sprayed with cooking spray. Move pan so mix covers the bottom. Turn crepes quickly so they won't over cook or burn.

For storing, spray an already grease resistant 9-inch paper plate with PAM cooking spray. Place cooked crepes on plate. Stack plates and wrap with plastic wrap to keep them from drying out. Can freeze or refrigerate.

Measure flour and liquid carefully, since consistency of batter is important. It should be about the consistency of thick heavy cream.
