"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Heat oven to 350º. Cut 1/2 c. margarine into 1 c. flour until particles are size of small peas. Sprinkle 2 tbsp. water over flour mixture; mix. Gather pastry into ball; divide into halves. Pat each half into two long rectangles on ungreased cookie sheet.
Heat 1/2 c. margarine and 1 c. water to rolling boil; remove from heat. Quickly stir in almost extract and 1 c. flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute; remove from heat. Add eggs; beat or stir vigorously until smooth and eggs are completely mixed in.
