1/2 cup butter, softened
1 cup sugar
2 eggs
1 tsp vanilla extract
1/2 tsp lemon extract
1 3/4 cup flour
1/2 tsp salt
1/4 tsp baking soda
1/2 cup sour cream
Glaze:
2 cups icing sugar (less)
3 Tbsp lemon juice (less)
Directions:
Directions:
Mix butter and sugar until fluffy. Beat in eggs and extracts. Combine flour, salt and baking soda. Add to creamed mixture alternatively with sour cream. Fill greased muffin cup 3/4 full. Bake at 400ºF for 18-20 min. Cool for 5 minutes before removing to wire rack. Combine glaze and drizzle over cooled muffins.
