1/2 c shortening
1 c sugar
2 eggs
3 ripe bananas, mashed
2 c flour
1 tsp baking soda
1/2 c nuts, pecans or walnuts (optional)

Directions:
Directions:
Cream shortening; add sugar. Mix together until creamy. Add eggs and mashed bananas.

Sift flour and soda together. Add gradually to liquid. Stir in nuts.

Pour into greased loaf pan.

Bake at 350º for 50-55 minutes. (test for doneness - might need a few more minutes)

What makes this special is there is NO liquid at all in this recipe. Very easy and good.
