1 egg
1 1/4 c extra virgin olive oil
1/2 tsp Dijon mustard
dash cayenne
pinch sugar
2 tbsp. cider vinegar
2 tbsp. lemon juice

Directions:
Directions:
In a food processor fitted with a steel blade place egg, mustard, cayenne and sugar. Blend briefly. With motor running add the oil slowly alternating with the lemon juice and vinegar. you may have to scrape the mixture down from the sides once or twice. Taste for flavor and add either lemon juice or sugar as necessary.

Options: Substitute lime juice for lemon juice and vinegar. Lime mayonnaise is perfect with seafood and delightful on roast beef and brie sandwiches.
