7 lbs. medium sized fresh cucumbers, washed and sliced
2 gallons water
2 cups pickling lime
2 qts. vinegar
8 cups sugar
2 tbsp. salt
2 tbsp. celery seed, tied in cloth
2 tbsp. pickling spice, tied in cloth

Directions:

Wash and slice (or split) cucumbers and let stand in water and lime for 24 hours. Wash in clear water and soak for 3 hours in clear water. Drain well and cover with vinegar, sugar, salt and spice bag. Let stand overnight. Heat and cook until pickles are clear (at least one hour). Seal in jars. Makes about 6 quarts.

These are the tastiest, crispiest, sweetest pickles you will ever eat. Zella Pampe made these pickles every year and loved giving them away along with the green glass-lidded canning jars she packed them in. We accumulated our own supply from her gifts. There is more to the canning process than her recipe shows. Call on someone who has made the recipe for more instruction on canning.
