2 lb boned turkey breast
1/2 c bread crumbs
1 tsp salt
1/8 tsp pepper
2 eggs beaten
1/2 c parmesan cheese
1 tsp oregano
1/2 c olive oil
3 tbsp. margarine
lemon juice

Directions:
Directions:
Pound turkey until thin. Pat dry and cut into 2" by 4" pieces. Combine bread crumbs, parmesan cheese, spices and salt. Set aside. Beat eggs in a shallow dish. Dip turkey into egg and then into the crumb mixture coating both sides. Heat oil and margarine in skillet. Saute turkey until brown, about 2 min each side. Remove to a warm platter. Sprinkle with lemon juice before serving.
