3 c. loose-pack frozen cut broccoli or Italian-style mixed vegetables
4 boneless, skinless chicken breast halves
Mayonnaise or something similar
1/3 c. fine dry Italian-seasoned bread crumbs
3 tbsp. grated Parmesan cheese (optional)
1/8 tsp. paprika (optional)

Directions:
In large strainer rinse vegetables with warm water to thaw slightly. Place vegetables in a 1 3/4-quart casserole or of similar size. Rinse chicken pieces and pat dry. Fold chicken pieces in half; secure with wooden toothpicks. Brush chicken on all sides with mayonnaise. Combine bread crumbs and cheese (may need more bread crumbs). Roll chicken in crumb mixture, coating generously. On top of the vegetables, arrange the chicken pieces with the thickest portions toward the edge of the casserole dish. Sprinkle chicken with paprika and any remaining crumbs.
Cook, covered, on high for 10-12 minutes or until chicken is tender and no longer pink.
