2 lb sliced boned chicken breast
1 c unsweetened coconut milk
1/2 c mango chutney
1/4 c chopped roasted peanuts
1/2 seeded jalapeno pepper
1 tbsp. chopped cilantro
1 tbsp. chopped mint
2 tbsp. peanut oil

Directions:
Directions:
Combine all ingredients except chicken in food processor or blender. Blend until smooth. Thread thin sliced chicken breast pieces on skewers and place in a shallow dish. Pour marinade over chicken and refrigerate overnight. Cook quickly on very hot barbecue or close to oven broiler.
